One of the nice things about working at home is that I can make a nice dish on my own, although it is not easy to motivate myself. Sometimes I get tired of repeating menus at the cafeteria at the reserach center, where the menus are slightly different everyday, but in my opinion, they all tastes the same somehow. So, it was today that I decided to make a nice food for my wife and for myself. The menu of the day was Jap-Chae (잡채). It is a mix of sweet potato noodle and various types of vegetables. It may have various versions depending on the family and region, but basic idea is that you can put most ingredients that you like. It’s one of the most famous Korean dishes, and I think it represents the core concept of the Korean cousine: harmonious taste of mix of vegetables with a simple seasoning. It has soy sauce in it, but the taste of the soy sauce should be very mild so that it does not harm the original taste of vegetables.
I think I spent more than an hour to make each ingrdients and to mix them, but it was a big success and very tasty. It was also liked by my wife. I was very happy because the last time when I tried, it was not as tasty as this, which I had to eat for several meals to finish. I guess I will try more often now that I found my own golden ratio with the ingredients I find in Germany. I hope I can serve it to guests on a weekend oneday.
